Recipe: Toffee Fruit Dip
This recipe is great for after school snacks, play dates, and parties. It is a great way to entice everyone to eat their servings of fruit for the day. 

Ingredients
  • 8 oz. of whipped cream cheese
  • 1/3 cup of packed brown sugar
  • 1 teaspoon of vanilla
  • 1/2 cup of crushed toffee candy bars
  • Optional: 2 Tablespoons of crushed toffee candy bars for garnish 
  • Optional: Serve with apples, grapes, and your favorite fruits 
Directions 
1. Add the 8 oz. of whipped cream cheese, 1/3 cup of packed brown sugar, 1 teaspoon of vanilla, and 1/2 cup of crushed toffee candy bars to a medium size bowl or container and stir until thoroughly mixed.



2. Serve the Toffee Fruit Dip with your favorite fruit. 



3. Optional: Wash, chop, and store extra fruit in case your party platter runs low during your party.  If you chop and store apples, toss the apple slices in lemon juice to help prevent them from turning brown.

Recipe: Banana Oatmeal Pancakes that are Gluten-Free with Optional Chocolate Chips
Ingredients:
  • 1 cup of milk
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 large banana (preferably ripe)
  • 2 cups of rolled oats
  • 1/8 teaspoon of salt
  • 3/4 teaspoon of cinnamon
  • 1/2 teaspoon coconut oil
  • Optional: 2 tablespoons of chocolate chips
Directions:
1. Add all of the ingredients with the exception of the coconut oil and the chocolate chips to a blender and blend until smooth. I use a Nutri Ninja blender on the UltraBlend setting and it's done in in approximately 60 seconds.

2. Optionally stir the chocolate chips into the batter if you want to include them.  We prefer mini chocolate chips, but it's based on your preference.

3. Heat the coconut oil in a nonstick pan over medium-low heat.

4. Add 1/4 cups of batter to the skill and cook for 2 to 3 minutes until bubbles form on the pancake and then flip and cook for approximately 1 to 1 1/2 more minutes.

This recipe is very easy to prepare.  We serve this chia pudding with a side of fresh fruit on Thanksgiving morning for breakfast. Our entire family looks forward to this healthy breakfast.

Ingredients:


    Directions
    1. Pour the soy milk into a glass.

    2. Stir in the Bob's Red Mill Chia Seeds and refrigerate for 15 minutes.

    3. After the 15 minutes, stir the mixture and then refrigerate again overnight.

    4. Enjoy in the morning!

    In today's post, I'll share a DIY project to make your own Light Saber Towel Bar and then details about the Star Wars bathroom accessories that we found in the extensive Star Wars Collection at Kohl's.

    DIY Light Saber Towel Bar Tutorial
    Supplies
    • 1 light saber (Kohl's has several. Click here to view the selection.)
    • 2 wall mounts with hooked edges that will support the weight of the light saber and towels. (These are available at most hardware stores.)
    Directions
    1.  Install the two wall mounts on the wall so that your light saber handle and top end will stick out 2" or more on the sides.

    2. Set the light saber on the wall mounts. 

    3. Place your favorite Star Wars towels on your Light Saber Towel Rack!
